Abstract
This paper presents the modes of procurement, exploitation and consumption of animals in the Ambato Valley (Catamarca, Argentina) from a diachronic perspective. Faunal remains recovered at the mound site of Martínez 3, on the lowermost sector of the valley, with an occupation ranging from 0-1.000 A.D. reveal that local animals, both wild and domestic though with a dominance of camelids, were exploited at all times. The data also reveal that there existed continuity of practices related with the consumption of these food resources, both in terms of slaughtering, processing and cooking.
